Wine:

The 2007 Red Castillon Côtes de Bordeaux L'Aurage represents everything one expects from a great Bordeaux wine with a noble evolution. Notes of undergrowth, dried morel, truffle, dark chocolate and stewed black fruits form an ultra seductive nose; the delicate and refined palate, with a patina of time, offers round and accomplished tannins, perfectly melted in a delicately spiced finish. A beautiful bottle to associate with a veal chop with small vegetables for example.

Vinification:

Mechanical harvesting on one day. Total destemming. Aged in barrels for 20 to 22 months.

Brick red color.

Nose:

Aromas of undergrowth, dried morel, truffle mixed with notes of dark chocolate and black fruits.

Palate:

Soft and fresh, this wine offers a seductive and complex whole with round and patinated tannins, the finish is finely spiced.

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Game terrine, country pâté, grilled beef and potatoes with Provence herbs, lamb shoulder in a herb crust, duck breast confit.
