Wine:

Carried by magnificent notes of black truffle, ripe plum, and juicy cherry, due to a generous amount of mourvèdre, the 2021 red Châteauneuf-du-Pape  asserts its presence confidently. It is a powerful, full-bodied, and concentrated wine, with soft and silky tannins that are perfectly civilized, framing a rich and voluptuous structure that lingers extensively. Undoubtedly one of the finest achievements of this delicate vintage. Rated 94/100 by Parker.

Vinification:

Harvested by hand. Vinification in truncated wooden vats for the reducing grape varieties (Syrah and Mourvèdre) and in concrete vats for the oxidative grape varieties. Aged in oak tuns for 12 months before bottling.

Color:

Deep red with violet highlights.

Nose:

The balance between ripeness and freshness is perfect, with notes of macerated black fruit and delicate spices.

Palate:

Voluptuous and elegant from the first taste, this cuvée tends towards a juice with spicy, garrigue flavors, a masterful balance between tannic richness and pleasant roundness.

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Rack of lamb with roasted chestnuts, pork cheek civet, fillet of beef with parsnip risotto and creamy sauce, aged Rocamadour.

Cellar aging:

From now until 2042.

Its spectacular terroir of rounded pebbles, combined with an intense perfectionism, creates top-tier cuvées that are deep and elegant, aging magnificently. Truly a cult winery!
