Wine:

What a discovery! The 2007 Sauternes Château Suduiraut is an ode to the Semillon grape variety, which makes up 92% of the blend. That year, the hot and dry weather of September allowed the botrytis to develop, making this vintage one of the most sumptuous of the last decades. Indeed, with an ideal balance between sugar, alcohol and acidity, this Sauternes wine combines all the assets of a great wine: the aromas of apricot, mango, dried fruit, pineapple, the touch of honey and vanilla, blossom in a full and deep frame, of great unctuousness. The very creamy touch brings an exquisite sensuality and the acidulous note an exemplary freshness. The finish is prolonged on candied orange and liquorice and closes this moment of pure delight. A very great Sauternes, with an extremely refined score, which still has many years ahead of it. One can already discover it with spicy dishes, a roquefort cheese or a lemon meringue pie.

Vinification:

Hand harvested grain by grain in 4 selections, fermentation in barrels with temperature control, aged 24 months in oak barrels. Residual sugars: 130 g/l - Liquorous wine.

Golden yellow with green shades.

Nose:

Fragrances of apricots, mango, dried fruits and pineapple mixed with honey and vanilla touches.

Palate:

Smooth and full, with a perfect balance between sugar, alcohol and acidity, this wine releases all its sensuality through the depth of its palate, its creamy touch, its acidulous note and its finish with notes of candied orange and liquorice. A pure delight!

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

On its own or with foie gras shavings on toast, pan-fried foie gras and saffron chutney, spiced lacquered duck or even roasted Bresse poultry, aged Roquefort Papillon cheese, crêpes Suzette or a citrus salad.

The meticulous management of the vineyard and its rich terroir of gravel and clay forge wines of an exemplary scale, linking finesse and expression of aromas in a beautiful and complex bottle. Often more powerful than its peers, Suduiraut is distinguished by an exquisite complexity and refinement that exults with time.
