Wine:

From vines averaging over 50 years old and aged in demi-muids with 20% new oak, the 2023 Chablis Grand Cru Vaudésir White unfolds with remarkable structure—rich, ripe, and strikingly vertical. This is a beautifully refined wine, offering floral and creamy notes with vibrant freshness and a pronounced mineral core. Perfectly balanced between depth and finesse, it’s built to age gracefully for six to ten years, yet can already be enjoyed today with a bit of aeration. Rated 93/100 by the Selection Committee.

Vinification:

Hand harvested. Vinification for 7 months, 70% in oak barrels and 30% in stainless steel vats, alcoholic fermentation at low temperature (18°C). Malolactic fermentation. Aged for 7 months in stainless steel vats.

Nose:

Combining minerality and maturity, beautiful concentration, creamy, fresh and floral notes supported by the shellfish touches of the Chablis terroir.

Palate:

Broad and generous, with beautifully ripe fruit, this wine is dense, fresh, refined, very vertical and perfectly balanced between consistency and finesse.

Temperature:

Serve between 10 and 12°C in a large glass.

Food and wine pairing:

Seafood platter, grilled lobster, roasted turbot fillet, creamy white meats, veal blanquette.
