Wine:

The 2017 red Clos de Vougeot Grand Cru unveils splendid notes of blackcurrant, rose, and spices, offering a myriad of invigorating flavors, layered and intense. This meticulously crafted wine is penetrating and coherent, backed by a delicate oak aging that promises to integrate seamlessly. It stands out for its precision of flavors and its profound texture, presenting both breadth and persistence. Rated 96/100 by RVF.

Vinification:

Vines aged 60 years or more on 1.87 ha. Hand-harvested. 100% destemmed. Cold pre-fermentation maceration for around 6 days, alcoholic fermentation using only indigenous yeasts in stainless steel tanks, daily pumping over with temperature and density controls, very little punching down depending on the vintage profile. Vatting time averages 20 days. Malolactic fermentation followed by 15 months' ageing in barrels, 30% of which are new and the remainder aged for 1, 2 and 3 wines, then racking and massing for 2 to 3 months in stainless steel tanks. No fining or filtration before bottling.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Veal chop with morel mushrooms, tournedos Rossini, beef cheek confit with pinot noir, roast guinea fowl, aged Saint-Nectaire fermier cheese from Cîteaux Abbey.

Cellar aging:

From now until 2040 and beyond for enthusiasts.

A cornerstone of an elite Burgundy with international acclaim, Domaine Jean Grivot stands as a prestigious address. Boasting a superb wine heritage, including no less than 12 Premier Crus and 3 Grand Crus, the Grivot family, led by Etienne and his children Mathilde and Hubert, crafts virtuoso cuvées built on fresh maturities.

A refined classic style that, in recent years, has gained in flesh density, with tailored aging, never exceeding a third of new oak.

Awarded 2 stars by the RVF Guide, this envied yet discreet domain thus offers silky and voluminous wines, always enhanced by a dazzling freshness that marks their global success.
