Wine:
From two old vines on a steep limestone base, one facing southwest on Pernand, the other south on Aloxe-Corton, the 2020 white Corton-Charlemagne Grand Cru asserts its grand cru status! Its noble origins, coupled with vines of an average of 60 years old and an uncompromising vinification, ensure a slow evolution. It is a white wine built for long aging, which boasts a lot of vitality and aromas of flowers, white fruits, and spices. A complex and persistent white wine of great dimension.Vinification:
Manual harvesting, pressing of whole grapes, fermentations and maturing on lees without added sulfites for 14 months.Color:
Pale and bright golden yellow.
Temperature:
Serve between 10 and 12°C.Food and wine pairing:
Lobster stew, braised sweetbreads, veal steak with morels.Cellar aging:
From now until 2033, and even more for enthusiasts.
It is a rare house, to which very few have access. Philippe Pacalet is an ultra-sensitive person, one of those who transcribe Burgundy with the most accuracy through the most natural vinifications possible, in whole bunches, without sulfur, followed by long maturations, in organic culture of course.
In the tradition of his mentors Marcel Lapierre and Jules Chauvet, he makes wines that combine mastery and aestheticism, perfect reflections of the great Burgundian terroirs that he has been exploring for twenty years. Awarded 2 stars in the French Guide Vert RVF, he makes sublime wines, of incomparable softness and precision, which are among the most authentic of their appellations.
