Wine:

From two family parcels planted in 1947 and 1976, the 2022 Red Volnay 1er Cru Santenots du Milieu is built for the long haul. Even at this early stage, it’s already showing beautifully — floral notes, fresh red berries, violet, and just a touch of smoke that opens up with air. On the palate, the wine is ripe and expressive, with layers of black fruit, a twist of pepper, and a firm tannic backbone that promises excellent aging potential. The structure is precise, the finish long and intense — this is a Premier Cru with serious pedigree. Give it time in the cellar, and pair it down the line with guinea fowl or pheasant for a perfect match.

Vinification:

Vines aged around 25 years old, with a subsoil composed of delicate river alluvium. Vinification in vats for around 15 days, then transferred to oak barrels (20% new wood) for at least 12 months.
The vines are grown using non-certified organic methods.

Temperature:

Serve between 14 and 16°C.
