Wine:

Born in the Clos, from a parcel located near Vosne-Romanée in the Maupertuis climate, the 2021 red Clos de Vougeot Grand Cru benefits from an elite terroir. Rich and structured, this assertive Pinot Noir presents a burst of finesse and freshness, thanks to the whole-bunch fermentation that softens and refines the wine's body. The tannins are pronounced, ripe, and promise longevity, edged with hints of licorice and sandalwood. This is a distinguished Clos de Vougeot.

Vinification:

Hand-harvested, vinified in whole bunches for 3 weeks with no added sulfites and twice-daily punching of the cap, alcoholic fermentation with indigenous yeasts without artificial temperature control, malolactic fermentation and ageing on lees in rooms, without racking, with stirring and no added sulfites for 17 months.

Color:

Bright, intense red.

Nose:

Fresh aromas of ripe red and black fruit.

Palate:

With a beautifully balanced profile, this cuvée offers refined structure and depth, supported by delicate tannins and layers of complexity.

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Beef tournedos with porcini mushrooms, sweetbreads with fois gras.

Cellar aging:

From now until 2035, and even longer for enthusiasts.

This is a rare estate, one few have the privilege to access. Philippe Pacalet is a deeply sensitive winemaker who captures the essence of Burgundy with remarkable precision and elegance, using the most natural methods possible—whole-cluster fermentation, no added sulfur, and extended aging.

Following in the footsteps of his mentors Marcel Lapierre and Jules Chauvet, he crafts wines under organic practices, balancing technical mastery with pure aesthetics. Each bottle is a true reflection of the great Burgundian terroirs he has explored for more than twenty years.

Awarded 2 stars by the French wine guide RVF, his exquisite wines—renowned for their silky texture and incomparable precision—are among the most sought-after in their appellations.
