Wine:

Crafted from a blend of rare, indigenous Corsican grape varieties sourced from the estate’s conservatory, the 2023 White Général de la Révolution, classified as a Vin de France, opens with delicate floral and coastal aromas—evoking sea spray and shellfish. Wild mint, fennel, yellow plum, and guava follow, adding aromatic depth and intrigue. The palate is bright and focused, yet broad and velvety, offering a beautifully poised expression of this sun-drenched vintage. Subtle layers of spice and candied citrus zest round out a complex and refined profile. A gastronomic white to savour with a well-prepared fish dish.

Vinification:

Hand harvested. The white grape varieties are blended directly in the press.
Direct pressing of whole or destemmed grapes, depending on the ripeness of the stems. Alcoholic fermentation and ageing in demi-muid barrels and on total lees for 9 months, then in stainless steel vats for 6-7 months after blending of the best batches. No malolactic fermentation. Aged in bottle for at least 6 months.

bright and energetic, this cuvée reveals a generous, velvety structure with impeccable balance—remarkable for such a sun-drenched vintage. Complex and refined, it unfolds with beautifully layered flavours of warm spices and candied citrus zest.

Temperature:

Allow to breathe and decant before serving at 10-12°C.
