The 2023 Côtes du Jura Chardonnay Ouillé White was aged in a Savagnin barrel without oxidative influence, preserving its purity and freshness. Driven by vibrant acidity, it reveals notes of fresh walnut, white orchard fruit, and hazelnut. This is a beautifully crafted White — both generous and precise — ready to enjoy now or cellar for another 3 to 4 years.Vinification:
Hand harvested in early October 2023 at full maturity. Fermentation at low temperature. Aged for 12 months, 50% in vats and 50% in barrels that previously contained Savagnin under a yeast veil. Topped up every 3 days.Certified organic wine.
