Wine:

Very intense, the 2020 Red Terrasses du Larzac is a blend of mainly Syrah and Mourvèdre, from a small limestone plot detached from the garrigue, located at an altitude of 250 meters. In this cool climate, the fruity aromas are perfectly preserved, with a smoky side brought by the syrah, and abundant notes of pepper and black fruits. The palate is both rich and velvety, with great freshness, sapidity and harmony, with a finish on violets. An elegant wine to be kept for a long time, to serve with lamb brochettes with herbs or a roasted duck breast. Rated 92+/100 by our Selection Committee.

Vinification:

Hand harvested, indigenous yeasts, natural fermentations, aged in 700L barrels and demi-muids. Unfiltered wine and a minimal dose of sulfur. In conversion to organic farming.

Color:

Dark red with some purplish reflections.

Nose:

Very peppery with plenty of black fruit flavors and a smoky-smooth edge from the Syrah. It is a wine of beautiful intensity of fruit both in color and in aromas.

Palate:

Beautifully made, rich and velvety, this wine is sapid, fresh and harmonious. The finish is marked by violets.

Temperature:

Serve between 16 and 18°C.

Lamb skewers with herbs, roasted duck breast, chicken with paprika.

Situated on north-facing high garrigues, Domaine L'Hermas is one of the new rising stars of the Terrasses du Larzac appellation. On this highly prized terroir, Matthieu Torquebiau found these "abandoned lands" (hermas in Occitan), planted syrah and mourvèdre and began an extraordinary adventure with a first wine in 2009.


An idealist and perfectionist, this winemaker makes wines that are tailored to his needs, delicate and concise, free from any fashionable effect. Fermentations without yeast, controlled maturation in 700-liter demi-muids, sobriety and restraint are the key words of these wines of great style. A must-discover from the Languedoc terroir, for sure!
