Wine:

The 2021 white Alphonse Mellot & VALAP Sancerre is a model of delicate, chalky Sauvignon, set on ripe fruit and a fine, invigorating structure. Notes of gunflint, citrus, a hint of menthol, and a vibrant finish: it's hard to find a better ambassador for Sancerre... A unique wine you'll love!

Vinification:

Hand harvested, whole berry pressing, static cold settling for 48 hours, fermentation in vats for 50% and the rest in new barrels, aged for 7 to 8 months on fine lees.

Organic and Biodynamic wine, certified.

Color:

Bright pale yellow.

Nose:

Beautiful notes of citrus and flint underlined by a mentholated touch.

Palate:

Tonic and rich with ripe flavors of fruit, this wine with a mineral and chalky profile delivers a pure palate with a persistent finish. A true ambassador of its appellation!

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitif, fish and shellfish, freshwater fish terrine, oysters, smoked trout, lightly ripened goat cheese from the Mâconnais or the Loire.

Partners since 2018, we are once again renewing our collaboration this year with the creation of these two bespoke cuvées. They were jointly designed by Alphonse Mellot himself and Olivier Poussier, Best Sommelier in the World, who personally selected the blends.
