Wine:

The 2020 white Pouilly-Fuissé Secret Minéral is a literal translation of this limestone terroir. It is a perfectly matured Chardonnay, sharp and incisive, with body and substance, but also a minerality mixed with well-integrated floral and vanilla notes, thanks to beautiful aging in wood. One savor the perfect maturity of the grapes, the concentrated palate, the vivifying juice of impeccable balance, with elegant and noble notes of wood. The whole is carried by chalky notes and great precision. A wine that is undeniably part of the circle of the great Chardonnays of Burgundy. Especially in this Magnum format, where the pleasure is at its maximum. Rated 95/100 by the Committee.

Vinification:

Hand harvested, whole grapes pressed, fermented with indigenous yeasts and aged 100% in barrels from 1 to 8 wines.

Color:

Bright gold with good intensity.

Nose:

Beautiful minerality skillfully mixed with well-integrated floral and vanilla notes. The maturity of the grapes is perceptible.

Palate:

Vibrant and concentrated, carried by beautiful chalky notes, this wine, with a graceful structure, releases a well-balanced palate with a perfectly mastered maturation.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Seafood, smoked Scottish salmon, scallop carpaccio, sea bass à la livournaise, mature cow's milk cheese, Saint Félicien, farmhouse reblochon.

Cellar aging:

From now until 2033.

Adored by the greatest Michelin star chefs, Denis Jeandeau has become a true phenomenon. Régis Marcon, Le Pré Catelan, Lameloise, l'Arpège, l'Ambroisie, Guy Savoy, to name but a few, have his wines on their wine lists. The young winemaker has always been very attentive and rigorous in his winemaking style and has chosen to produce only a limited number of elite wines with a very selective distribution.
