Wine:

Rated 94/100 by the Committee, the 2022 white Saint-Véran Terroirs de Davayé resonates with a lovely tension and abundant freshness. In a very refined style, it is driven by a minerality that sets its pace, with notes of white flowers and citrus, and perfectly ripe fruit. The dilemma it presents is whether to drink it now or keep it!

Vinification:

Hand-harvested. A blend of juices from plots in the village of Davayé. Only first juices. Alcoholic and malolactic fermentations in barrels. Aged in barrels with little stirring.

Color:

Pale, bright golden yellow.

Nose:

Fragrances of white flowers underscored by fresh citrus notes.

Palate:

Fresh and taut, with crunchy aromas of fruit, this cuvée reveals its purity and minerality.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Jambonnettes of frogs with parsley sauce, goujonnettes of snacked sole, fillets of sole or other fish meunière or beurre blanc, a warm pike soufflé.

Cellar aging:

From now until 2030, and even longer for enthusiasts.
