Wine:

Blended from two parcels, the 2022 white Saint-Véran Terroirs de Davayé  resonates with a striking tension and abundant freshness. In a very refined style, it is driven by a mineral undertone that sets its pace, featuring notes of white flowers and citrus fruits, along with perfectly ripe fruit. To drink or to keep: that's the dilemma it presents!

Vinification:

Hand-harvested. A blend of juices from plots in the village of Davayé. Only first juices. Alcoholic and malolactic fermentations in barrels. Aged in barrels with little stirring.

Color:

Pale, bright golden yellow.

Nose:

Fragrances of white flowers underscored by fresh citrus notes.

Palate:

Fresh and taut, with crunchy aromas of fruit, this cuvée reveals its purity and minerality.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Jambonnettes of frogs with parsley sauce, goujonnettes of snacked sole, fillets of sole or other fish meunière or beurre blanc, a warm pike soufflé.

Cellar aging:

From now until 2030, and even longer for enthusiasts.

Defying the ravages of time, much like the great wines of Burgundy, these vintages consistently rank at the top, and this Mâcon-Pierreclos is no exception.
