Wine:

The 2023 Red Côte-Rôtie strikes the perfect balance of classic Syrah character, with mineral notes from the terroir, a subtle smoky touch and a beautifully judged oak aging. With its firm tannic structure, this is a wine that needs time — give it 6 to 12 months before opening to let it show its full potential, and it will easily age for 6 to 8 years, even longer for those who enjoy the patience.

Vinification:

Hand harvested. Pre-fermentation cold treatment for 2 days at 8°C, alcoholic fermentation for 1 week and maceration for 21 days in temperature-controlled stainless steel vats at 28°C. Aged for 18 months, 80% in oak barrels, 20% of which are new, and 20% in jars.

Very pure, mineral notes mixed with smoky hints and a woody presence without being overpowering.

Palate:

The palate offers a structured and powerful ensemble that will benefit from 6 to 12 months of cellaring to reveal its full potential.

Temperature:

Serve between 14 and 16°C in a large glass.

Roasted or grilled red meats, Salers or Charolais beef ribs, duck breast, rack of lamb in a herb crust, mature cheeses.
