Wine:

A seamless blend of century-old Grenache and younger Syrah vines in equal measure, the 2022 Fiancée Red Châteauneuf-du-Pape is all about balance and finesse. Delicate floral aromas, hints of spice, and touches of violet unfold over a fine, elegant structure, delivering remarkable harmony and poise. Aged in large oak casks, demi-muids, and concrete eggs, and bottled without filtration, this is a wine of purity and precision—crafted with care and available in ultra-limited quantities.

Vinification:

Hand harvested. The Grenache grapes come from the Terres Blanches district, a hillside vineyard with century-old vines that ripen very early. The Syrah grapes come from the Cabrières district, where the vines are around thirty years old. Vinification takes place in concrete tulip-shaped vats in a gravity-fed cellar. Maceration lasts for over four weeks, followed by gentle extraction and ageing in large oak casks for 18 months.

Temperature:

Decant before serving at a temperature of between 14 and 16°C.

Sautéed rib of beef with bone marrow, herb-crusted shoulder of lamb, chilli con carne, aubergine tian, cheeses.
