Wine:

Totally unique in the world of Provence rosés, the 2021 Tête de Cuvée Tavel Rosé wine is bursting with intensity, fragrance, and depth. It is a lightly tiled-colored rosé with nuanced and exquisite flavors of pit fruits, red fruits, spices, and candied orange. Deep, ripe, and delicious, it unfolds a perfectly calibrated palate of great density with a certain tannic presence, avoiding any technological pitfall. This mealtime rosé asserts its personality and will delight throughout the years. Pair it with peppers stuffed with cod, for example, a spicy monkfish, or a risotto with chorizo.

Vinification:

Hand harvested. De-stemming and crushing of the grapes followed by a cold maceration of 24 to 48 hours. Alcoholic fermentation at a controlled temperature of 16 to 18°C during 15 days. Maturation in 25 hectolitre tuns for 9 to 12 months.

Intense, tile-like rosé with amber reflections.

Nose:

Wonderful aromas combining complexity and finesse. We find notes of pit fruits, a beautiful expression of ripe Grenache, all sprinkled with touches of white chocolate and a hint of spice.

Palate:

A true mealtime rosé, it dazzles us with its subtlety, its fresh structure with accents of red fruits, its structure revealing delicate and silky tannins. A long and refined persistence makes this Tavel rosé a rosé for tasting, summer and winter.

Temperature:

Serve at 10 to 12°C.

Food and wine pairing:

Stuffed bell pepper with cod, white meat, roasted pig, monkfish spiced with paprika, risotto with chorizo, tajine of kefta with prunes, almonds and sesame.

From now until 2033 and more for enthusiasts.

Established soundly between Châteauneuf-du-Pape, Lirac, and Tavel, the Château de Manissy is a treasure of the Southern Rhône Valley, crafting exciting wines consistently offered at reasonable prices. Owned by the Missionary Fathers of the Holy Family for more than a century and managed biodynamically by the talented Florian André, this estate is a new haven for wine lovers.

On the Tavel vineyard, it elaborates colorful and intense wines suitable for aging, in contrast to the pale rosés of Provence. This discreet terroir, an incredible geological millefeuille, produces great gastronomic wines, appreciated by the finest tables. During our last visit to the estate, we had the chance to taste a vertical of the famous Tête de Cuvée: 1975, 1985, 1995, 2005. Their common trait? A fruity taste and an indescribable substance. Yes, rosé wines can age, here is the proof!
