Wine:

Rated 100/100 by Parker, the 2011 red Ermitage Pavillon is arguably one of Michel Chapoutier's most iconic cuvées. Originating from the granite soils of Les Bessards, this spectacular red sets the standard for Ermitage—aromatic, intense, enchanting. With notes of black fruits and spices, floral nuances, and supreme refinement, yet simultaneously concentrated and powerful: everything converges towards perfection here. Given another two or three decades, it will refine further and secure its legacy. Unless, of course, you give in to its allure sooner.

Vinification:

Hand harvested, 100% destemmed, vinification of 4 to 5 weeks in concrete tanks with punching down, only free-run wine is used for this parcel selection, aged 18 to 20 months in oak barrels of which 30% new on average.
