Wine:
All in delicacy, concentration, and freshness, the 2019 white IGP Côtes Catalanes Coume Gineste is among the finest white wines of the south. A blend of white and grey Grenaches, this wine aged 24 months in tuns imposes its power with great ease and undeniable authority. Floral notes, lemony reduction, sapid and complex structure, superb length: a great among the great! A very pure expression of the limestone and iron schist of Calce.Vinification:
Hand harvested in crates, direct pressing, light settling, indigenous yeasts, aged for 20 months in old tuns and barrels and 4 months in bottle before marketing. Bottled without fining or filtration.Certified organic wine.
