Wine:

Pure Petit Manseng from a micro-parcel, the 2021 Jurançon Caubeigt captures all the vitality and freshness of these clay and pebble soils. Hand-picked in early November, it delivers the quintessence of the grape variety coupled with a sparkling over-ripeness; it is Jurançon in all its elegance, accompanied by a perfect maturation in wood, offering rich and fresh notes of candied and exotic fruits. Far from the overkill of sweet wines, it remains measured, pure and elegant, perfect to match with foie gras, poultry with curry, roquefort or a citrus salad. Rated 98/100 by the Selection Committee!

Vinification:

Hand harvested in early November from vines dating from 1985, 1988 and 1990. Slow pressing in whole bunches, vinification in wooden containers of different volumes and in sandstone eggs.
Aged on lees for 10 months then 2 months in stainless steel tanks.

Color:

Intense, bright gold.

Nose:

Fresh and balanced with beautiful aromas of pineapple and fresh mango, the two classic markers found on Jurançons. We find a fine and subtle woody taste.

Palate:

Remarkable, this wine combines freshness, intense exotic flavors, purity and precision on an elegant frame. With an incredible finesse, these delicate aromas reveal a dazzling work.

Temperature:

To be served at 10 to 12°C. The estate recommends decanting, which will amplify the aromatic palette.

Food and wine pairing:

As a dessert with a passion fruit soufflé, it can be enjoyed as an aperitif on toast with foie gras and toasted farmhouse bread or with hazelnut and raisin bread, Fourme d'Ambert or other blue cheese.

An outstanding winemaker, Franck Lihour has taken over at the helm of the Castéra Estate, a family address of great reputation. Since 2014, the 12 hectares of vines perched on hillsides at an altitude of 300 meters deliver the finest expressions of the appellation.

Having worked in South Africa, California, Burgundy, Clos Venturi or Château Suduiraut in Sauternes, Franck Lihour has worked with the greatest to build up a solid experience that he puts into practice at Castéra to forge jurançon wines of incredible depth and tension. The organic and biodynamic culture are just another layer of this irreproachable winemaking style, centered on bringing out the very best of each parcel with precision and concision.
