Wine:

The 2020 Les Jardins de Babylone Demi-Sec White (Vin de France) opens with warm spice, dried fruit, juicy pear, and stone fruit aromas—wrapped in a mouthwatering, high-wire tension that keeps everything perfectly in check. There’s a gorgeous interplay here: crisp and vibrant on one hand, silky and creamy on the other. The texture is plush, the balance spot on, and the finish lingers with serious charm. Rated 94–96/100 by the French wine guide RVF. A thrilling wine that dances on the edge between indulgence and precision.

Vinification:

Hand harvested. Slow pneumatic pressing, fermentation and aging in wood for 12 months in cigar-shaped oak barrels, mass period of 6 to 8 months before bottling, then aged in bottle for an average of 2 years before release. Residual sugar: 72.62 g/L (Demi-Sec wine).

Temperature:

Serve between 10 and 12°C in a large glass.

Foie gras terrine, pan-fried foie gras, roast free-range poultry, fish in cream sauce, white meat in cream sauce, all truffle dishes, Ossau-Iraty sheep's cheese, mango carpaccio, apricot and flaked almond tart, citrus fruit cake, vanilla flan, passion fruit panna cotta.
