Wine:

Entirely vinified in oak barrels, the Grand Cru Brut Rosé Champagne features a full and generous character, based on the 2017 harvest supplemented by the 2016 harvest (30%), a share of reserve wines (20%) including a touch of pinot noir from Coteaux Champenois. The aromas of morello cherries, red fruits, pepper and curry, a very delicate and refined palate, a swirling bubble and a magnificent final percussion make this a winey and subtle rosé at the same time. Ideal at the table with a duck with red fruits, a sweetbread with spices or even a lobster snacked with shellfish oil. Impeccable !

Vinification:

Hand harvested, vinified with indigenous yeasts and entirely in oak barrels, base 2017 completed by 30% 2016, 20% reserve wines 2015 and 5% pinot noir juice. Long aging on lees for 48 months before disgorgement. Unfiltered wine.

Dosage: 2 gr/l.

Pastel pink, clear, twisted with fine and regular bubbles.

Nose:

Gourmet aromas of morello cherries, red fruits and spices.

Palate:

Delicate and refined , with a pleasant structure associated with a swirling bubble, this champagne is both vinous and very subtle.

Temperature:

Serve between 8 and 10°C.

Food and wine pairing:

Duck with red fruits, sweetbreads with sweet spices, Asian dishes, lobster simply snacked and drizzled with shellfish oil.

From the very first cuvée in the range, one is captivated by this honest style, which balances strength and restraint while skillfully handling pinot noir. These are robust champagnes, underscored by very old vines, wines vinified in barrels and matured extensively in the cellar to refine and blossom at just the right moment. Purity, nobility, and definition are impressively regular features.
