Wine:

From a single hectare planted in 1960 on upper-slope clay-rich soils, the 2014  Dizy Corne Bautray Extra-Brut White Champagne is a rare, small-production wine made entirely from Chardonnay. Remarkably precise, full-bodied, and deeply elegant, it offers a fine, airy mousse and a saline finish that lingers with finesse. This is a Champagne that opens the door to the world of truly great wines from the region.

Vinification:

Hand harvested on 2 October 2014. Vineyard: 9,000 Chardonnay vines planted on 1 hectare in 1960. Vinification in 40-hectolitre casks, stirring of the lees, full malolactic fermentation, two rackings before bottling without filtration, 16 years on the lees before disgorging in February 2024. Dosage: 0.5g/l. Extra Brut. Production of 5,680 bottles and 300 magnums.

Temperature:

Serve between 8 and 10°C.

Roast free-range poultry, duckling in its juices, fine fish in a creamy sauce.
