Wine:

With its pristine freshness, the 2017 red Les Pensées de Pallus Chinon radiates youthfulness, untainted by the passage of time. It is a Cabernet Franc of very good maturity, with floral and graphite notes, backed by honest and sovereign flavors of fruit. It is intense and generous, with present but delicate tannins, and is a very beautiful bottle. To drink now with a veal chop or in a few years. Rated 94/100 by our Selection Committee.

Vinification:

Hand harvested, fermented and macerated for 21 days in concrete tanks with indigenous yeasts, aged for 12 months in Burgundy barrels and 6 months in concrete tanks.

Color:

Very dark red with some garnet reflections.

Nose:

Floral and graphite notes.

Palate:

This wine is intense, generous and of a beautiful maturity supported by present but delicate tannins.

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Veal chop, oven roasted turkey.

Anchored in Cravant-les-Coteaux, the birthplace of the best Chinon Cabernets, the Domaine de Pallus occupies exclusively the limestone slope with its 14 hectares of vines. A unique location, immortalized by the Sourdais family since 1889.

Each year, the estate asserts its regularity and its candor with radiant and fruity wines, nourished by these first-class limestone terroirs and cultivated organically. Bertrand Sourdais works with care, shaping his wines in accordance with the individual expression of the soil of each parcel. 

This widely exported estate, which ages its wines for five years in the cellar before marketing them, is present on the menus of the finest Michelin-starred establishments: the Fat Duck in London, Caprice Four Seasons in Hong Kong, Pierre Gagnaire and Le Taillevent in Paris.
