Wine:
A blend of chardonnay (80%) and savagnin aged under veil for three years, the 2016 white Côtes du Jura is an oxidative white of great delicacy. It's a charming wine with a suave, graceful heart on the palate, with notes of white fruit, honey and almond. The structure remains long and deep, the oxidation discreet and well-balanced, with a subtle finish. A little Jura gem!Vinification:
Harvested by hand. Alcoholic and malolactic fermentations in vats until the spring following the harvest. Aged for 3 years in 228-liter oak barrels under a veil of natural yeasts. Not toasted.Color:

Lively, rich and flattering, the tension is superb, with a lovely saline bitterness on the finish. This cuvée easily rivals the finest Chardonnays!

Laurent Macle and his sister Christelle carry on their father's work with devotion, cultivating rarity and patience. The 10 hectares devoted entirely to Château-Chalon serve the cause of careful oxidation, without ever forcing the issue. In recent vintages, "ouillés" (non-oxidative) wines have also appeared, of comparable excellence.
These are mythical and legendary wines, built for eternity, and still very hard to find.
