Wine:

The 2021 White Châteauneuf-du-Pape Les Sinards is very classic in style, developing beautiful aromas of fennel, anise and white flowers. The palate asserts itself with authority but without being overpowering, with a lot of richness, fatness and above all a superb freshness. A rare bottle (only 6% of the appellation is dedicated to this color) to discover with cooked fish or fresh cheeses. Rated 91/100 by the Committee.

Vinification:

Hand harvested. Pressing on arrival at the cellar in a pneumatic press. Static cold settling, without any addition. Alcoholic fermentation in vats. Aged in demi-muids for several months with regular stirring.
Wine from parcels managed by the Château de Beaucastel team. Vineyard of 2.5 ha which is part of what is called "Le Clos du Château". Terroir composed of alpine diluvium deposits, pebbles and clay.

Color:

Bright light yellow.

Nose:

Fragrance of white flowers with a halo of fennel and a touch of aniseed.

Palate:

Round and rich, this overpowering wine unfolds a palate of superb freshness.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Scallops, smoked salmon, Asian cuisine.
