The 2021 Les Grands Carmes Rosé IGP Pays des Bouches-du-Rhône seduces with its intense hue, stone fruit notes, freshness and consistency. It's a lively, full-bodied rosé with good structure, volume and suppleness. Ideal with white meat or grilled fish.

Vinification:

Hand-harvested at full maturity, partial destemming, fermentation and ageing on fine lees exclusively in small oak foudres. Natural decanting by racking.

Color:

A coppery rosé with good intensity.

Nose:

Lovely pit fruit notes mixed with spicy accents.

Palate:

Fresh and consistent with bright fruit. This rosé's juice is lively and full-bodied, with good structure, volume and suppleness.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitif, toast and shavings of cured ham from France, Italy or even Iberia, seafood spiced with Espelette pepper, fish on the grill and why not a white meat or a few duck aiguillettes, rack of lamb, tian of Nice vegetables, veal mignon in a tomato viennoise, small red mullet with rosemary snacked on the grill or pan-fried.
