Wine:

Old vines and contained yields are two secrets of Xavier Braujou’s winemaking techniques. The 2020 Red IGP Pays d'Hérault Le Pradel has them perfectly. This pure Cinsault wine, with its assertive Languedoc temperament, remains animated by a natural freshness, with flavors of red fruit, floral and spices. The delicate, fruity texture stretches into an impressive finish that is both fresh and elegant. A model of pure and assertive Languedoc.

Vinification:

Hand harvested, aged for 12 months in barrels.

The vineyard is run according to the principles of organic and biodynamic farming, which is not certified.

Temperature:

Decant before serving between 16 and 18°C.

Food and wine pairing:

Shoulder of lamb with herbs, duck breast with pepper, eggplants Languedoc style, braised beef cheek with mashed potatoes in olive oil.

Of very good reputation, after having earned a well-deserved first star in the French Guide of the RVF, the Domaine La Terrasse d'Elise is one of those cherished addresses passed around in fine wine connoisseur circles only. Indeed, on these limestone and pebble terroirs of the Aniane area, Xavier Braujou discreetly produces - in very small volumes - beautiful representations of southern wines, bottles of great character, freshness and delicacy that are completely avant-garde. 

His ultimate reference is none other than the legendary Rayas estate, and when you taste his wines you can see that the style is indeed very similar! Old vines, minimal yields, organic and biodynamic farming principles, meticulous work in the cellar with very few interventions, little extraction and indigenous yeasts, forge single-variety wines that are at the top of the Languedoc production.
