Wine:

From a stonier part of the appellation, with vines aged between 35 and 70 years, the 2021 white Puligny-Montrachet La Truffière 1er Cru shows finesse, with a luminous body, releasing sapid fruit bursting with freshness, where citrus and salinity coat the finish with a fine texture. Powerful and masterful, absolutely perfect! Rated 95/100 RVF.

Vinification:

Harvested by hand. Aged for 12 months in 350-litre barrels, 15-20% of which are new, then 4-6 months in vats before bottling.
Parcel of 0.49 ha. Soil: clay-limestone. Vines planted in 1952 and 1987.

Temperature:

Serve between 10 and 12°C in a large glass.

Fillet of sole with tarragon butter, Bresse poultry in a light cream sauce, sweetbreads with white truffles.
