Wine:

From old vines, some over 60 years old, and partially aged in barrels with little to no new oak, the 2022 white Chablis 1er Cru Vaillon is a textbook example of its kind. It opens with aromas of white fruits, flowers, and citrus, unfolding into an energetic yet generous palate with total refinement. This is an exceptional wine with outstanding aging potential of 15 years or more, showcasing perfect maturity.

Vinification:

Hand harvested. Pneumatic pressing, cold settling and temperature-controlled fermentation.
Vinification and ageing for 55% of the harvest in temperature-controlled stainless-steel vats, and for the remaining 45% in barrels (of which 5% are new, and the rest from 2, 3 and 4 wines) for 8 months, then blending for 2 to 4 months in vats before bottling.

Bright golden yellow.

Nose:

Notes of white fruit, white flowers and citrus.

Palate:

Generous and refined with fresh fruity flavors, this wine releases a juice of great maturity, with an energetic structure and fabulous aging potential!

Serve between 10 and 12°C.
