Wine:
A 70-year-old vineyard, the 2020 red Maison Dieu Burgundy offers us a beautifully crafted Pinot Noir, full of fruit and velvety texture. It comes from a vineyard originally located in Pommard, but which was declassified when the national highway was built. Aged in oak barrels like a village, this Bourgogne has benefited from all the care of a great terroir. Enjoy it with a veal chop with chanterelle mushrooms, monastic cheeses, or a mature farmhouse Saint Nectaire - it's perfect!Vinification:
Harvested by hand. Vines average 70 years old, facing south-east. The "Maison Dieu" vineyard is located just outside Pommard.Cold maceration for 48 hours, 80% whole bunches. Slow, natural maceration, pumping over once a day and punching down twice a day. Traditional, natural, non-inoculated fermentation. Aged in French oak barrels (30% new) for 15 months.
Color:
Bright, intense red.Nose:
Powdery, macerated red fruits, fine toasty note brought by woody ageing. A ripe 2020 with a fresh profile.Palate:
Dense and velvety on the palate, with fine, coated tannins. This is a gourmet Pinot Noir that's already seductive in your glass.
Temperature:
Serve between 14 and 16°C.Food and wine pairing:
Roast poultry, veal chop with chanterelle mushrooms, monastic cheeses, matured farmhouse Saint Nectaire.Cellar aging:
From now until 2026, and even longer for enthusiasts.Founded in 2004 by Michael Shaps in the spirit of Bordeaux "garage wines", Maison Shaps is a highly confidential address, confined to just 4 hectares between Pommard, Volnay and Bourgogne Côte d'or, a 0.64-hectare plot in Bouzeron and a few targeted supplies for the négociant side of the business. In parallel with this activity, Michael Shaps has been running the Michael Shaps Wineworks vineyard in the USA since 2007, while his daughter Hanna has taken over in Burgundy. An address not lost on our discerning sommeliers!
