The 2024 Bourgogne Côtes Salines White comes across in a very Chablis-like style — pure, crystal-clear and bursting with mineral brightness, with no oak influence to weigh it down. A touch of noble green notes adds energy and precision, giving the palate a crunchy, mouthwatering edge that’s refreshing and seriously stimulating.It’s the perfect aperitif wine, the kind that pairs effortlessly with goat cheese, seafood, oysters or shrimp.
Vinification:
Mechanical harvesting, direct pressing. Indigenous yeasts, fermentation in stainless steel vats at a controlled temperature between 16 and 18°C. Full malolactic fermentation, aged on fine delicate lees for 5 to 6 months in stainless steel vats. Fining and filtration before bottling.Color:
