Wine:
Made entirely from Sciaccarellu, the 2023 Red Monte Bianco, classified as a Vin de France, was vinified and aged in large oak vessels—allowing for a gentle integration of wood influence. The result is a powerful, expressive wine with vivid aromas of red berries, wild strawberry, and morello cherry, intertwined with the herbal notes of the Corsican maquis. On the palate, it’s smooth and fruit-forward, with a touch of toastiness from the aging process. Silky, refined tannins frame the wine, leading to a fresh, mouthwatering finish carried by bright red fruit flavours. An absolutely delightful wine, equally suited to grilled red mullet, tapenade toasts, or spiced roast chicken.Vinification:
Hand harvested and destemmed. Skin maceration in thermo-regulated truncated cone vats and fermentation for approximately one month with daily punching down and pumping over. Spontaneous fermentation with lees. Devatting and pressing of the marc, separation of the juices into vats and ageing in demi-muid barrels for 12 months. Racking and blending in stainless steel vats, ageing for 6 months before clarification filtration and bottling.Color:
