Wine:

The 2021 white Pouilly-Fumé combines finesse and delicacy in a pure, chiseled palate, without excess. The maturity is optimal, the grape juicy, and the fruit well expressed between citrus and white fruits. The dynamics of palate and the tension are ideal; it is a very beautiful white with a saline finish. A very nice success, which is already aiming for the top.

Vinification:

Mechanical harvest, blend of two terroirs: caillottes and silex, vinification and maturation in stainless steel tanks for 15 months.

Pale golden yellow

Nose:

Beautiful aromatic profile marked by white fruits and citrus.

Palate:

Fine and delicate, this wine with pure chiseled juice, without excess, reveals a dynamic aspect and a perfect tension. A nice white wine with a saline finish.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitif, toast of country bread, fresh goat cheese, sea bream carpaccio, grilled salmon pave with lemon chive sauce.
