Wine:

A trio of Grenache, Mourvèdre and Syrah, the 2019 Red Côtes de Provence Le Chemin recites all the codes of an enchanting Mediterranean wine: smoky, spicy and garrigue notes seduce at first sight, enrolled in a ripe material, with smooth tannins. A very unifying wine that deserves to be decanted for an hour or so, and that promises a good aging potential!

Vinification:

Hand harvested, clay-limestone soil, vines aged between 40 and 60 years, total destemming without crushing, indigenous yeasts, aged on fine lees in French oak barrels for 12 months, no fining or filtration. Production of 11 000 bottles.

Certified organic wine and in conversion to Biodynamics.

Color:

Red of beautiful intensity, purple reflections.

Nose:

Aromas of black fruits mixed with notes of garrigue, smoky and spicy perfumes.

Palate:

Ample and elegant, it is a wine still gathered around flavors of fruit of beautiful maturity with smooth tannins and a beautiful aging potential.

Temperature:

Decant one hour before serving between 16 and 18°C.

Food and wine pairing:

Rib of beef, roast shoulder of lamb, guinea fowl with bacon, jugged hare, roast leg of venison.

Cellar aging:

From now until 2027

Carried by the freshness and the energy of this terroir of the Haut-Var, the Clos de l'Ours shakes up the hierarchy of the Provencal vineyard. The Brotons family jealously guards 15 hectares of old vines surrounded by wood, in biodynamic culture, forging sincere wines with a southern accent that remain smooth and mineral; conquering wines that seduce all the finest starred tables including Pierre Gagnaire or Le Pré Catelan!
