Wine:

A blend of Grenache and Bourboulenc, the 2021 White Châteauneuf-du-Pape L'Intimiste offers itself with finesse, purity and balance. Notes of fennel, aniseed, and mint make up a superb nose that is both crisp and precise, with a lot of freshness. The palate is lively, incisive and delicate, testifying to a perfect maturity of the harvest. A great refined white wine, refined and crystalline, to be aged for another eight to ten years. A Selection Committee Favorite!

Vinification:

Hand harvested, the grapes are destemmed and pressed. Vinification in stainless steel tanks and low temperature barrels. Maturation for 6 months, 70% in stainless steel tanks and 30% in demi-muids.

Color:

Pale yellow with green reflections.

Nose:

Fine and precise on beautiful aromas of fennel and green anise underlined by mentholated touches.

Palate:

Clean and lively, the attack is frank and incisive, this crystalline palate reveals a brilliant freshness accentuated by a delicate minerality.

Temperature:

Serve at 10 to 12°C.

Prawn risotto, fish and seafood sauerkraut, chicken supreme and its creamy girolles sauce.
