Wine:

With an impressive tannic structure, the 2019 Red Ermitage Le Pavillon unfolds a phenomenal depth that will fully develop over the next few years. It is a masterpiece of structure and perfume, which will develop admirably with time. A great wine of time and emotion. Rated 98+/100 by Parker.

Vinification:

Hand harvested, 100% de-stemmed and vinified in concrete tanks, aged from 12 to 18 months in oak barrels, 30% of which are new.

Organic and Biodynamic wine, certified by Demeter.

Color:

Red of beautiful intensity finely hemmed with purple.

Nose:

Bouquet of slightly stewed black fruits underlined by notes of mocha, spices and black olive.

Palate:

Rich and concentrated, this wine with a creamy texture has a palate of a fabulous density

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Rib of beef with Bordeaux sauce, venison with Grand Veneur sauce, hare à la Royale or jugged hare.
