Wine:

Carried by aromas of citrus fruits and a touch of aniseed, honey and white fruits, the 2021 White Côtes du Roussillon Altaïr has a lot of freshness and tension. This wine is made from three parcels planted in the 1940s on calcoschist soils, mixing Grenache Gris and Macabeu. It has a beautiful concentration and tonicity, bearing the mark of these great terroirs of schist, with a lot of elegance. It is a singular wine, with a spicy finish, very fresh for the region, which augurs well for aging. Serve with grilled red mullet. Rated 92+/100 by the Committee and 93/100 RVF.

Vinification:

Hand harvested, direct pressing then very light settling. 40% of the volume is vinified in one-wine demi-muids, and 60% in stainless steel tanks.

Color:

Pale, almost translucent.

Nose:

Aromas of white fruits, anise, honey and very intense flavors of citrus.

Palate:

With a beautiful density and freshness, this wine reveals a beautiful concentration and tension with a spicy finish. It is a singular wine with a beautiful aging potential

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Pan fried red mullet, fish terrine, baked golden lake fish.
