Wine:

Predominantly made out of Grenache Blanc, the 2021 White Châteauneuf-du-Pape releases beautiful aromas of white flowers, peach and apricot. Carried by a fresh vintage, it unfolds a tense, chiselled structure, with good volume and a beautiful saline persistence. The ageing without the addition of wood enhances this sensation of freshness and liveliness; a very nice wine to enjoy at the beginning of a meal or with cooked fish.

Vinification:

Hand harvested grapes from more than 40 different plots on the coolest terroirs of Châteauneuf-du-Pape. The Roussanne and Picpoul grapes are fermented and aged in oak barrels for 6 months. The Clairette and Grenache grapes are fermented at low temperature to preserve their minerality. Blends of the different grape varieties are then matured in concrete and stainless steel vats.

Nose:

Fine and delicate with beautiful aromas of white flowers, vine peach and apricot.

Palate:

Rich and complex, this wine has a clean and lively initial taste and delivers a perfect balance between aromatic persistence and structure, with its silky and harmonious palate. We appreciate its subtle finish, underlined by a hint of saltiness.

Temperature:

Serve at 10 to 12°C.

Food and wine pairing:

Salmon and mango tartar, grilled sea bream fillet, poached poultry and citrus sauce, prawn risotto, goat cheese.
