Wine:

Sovereign, the Brut Sous Bois Champagne imposes its spherical dimension with energy. Vinified in wood, the three historic grape varieties are combined with complexity and power, displaying fine buttery, pastry, dried fruit, citrus and noble wood notes. This is a stylish champagne for wine lovers, which will age very well for several more years. Its great depth of flavours makes it ideal for the table, with white meat or fried chanterelles.

Vinification:

Hand harvested, vinification in oak barrels at low temperature, composed of 30 to 35% of reserve wines, aged 6 years on lees in bottles.

Dosage : 7g/l.

Color:

Bright golden yellow with a fine and regular bubble.

Nose:

Flavors of dried fruits, fresh citrus, white fruits accompanied by fine buttery notes.

Palate:

Elegant and refined, this Champagne reveals a refreshing and creamy texture underlined by a beautiful vivacity.
