Wine:

Olivier Poussier's favorite, the 2021 Red Limestone Pic Saint-Loup, is dense and full-bodied, well-balanced, punctuated with notes of spices, pepper and violets. The silky tannins, the perfectly melted whole form a gourmet wine. You will enjoy it from now on and for another 5 to 6 years.

Vinification:

Hand harvested, vinified in vats and aged for 10 months in vats and barrels.

Organic wine, certified.

Color:

Dark garnet.

Nose:

Clean with notes of red fruits, spices, violets and Sichuan pepper.

Palate:

Precise and of a beautiful maturity, this wine is full-bodied, dense with a beautiful balance in palate underlined by silky tannins. A superb wine!

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Roast beef in a crust, beef rib with pepper, roast chicken with herbs.
