Waterford Irish Single Malt Whisky Organic Gaia 1.1 is a very complex whisky with a concentrated aroma that releases notes of ripe fruit (pear, mirabelle plum), spearmint and beeswax on aeration and gives a very pleasant sensation of maturity and freshness. Ample and rich, with the same vanilla and herbaceous trail as on the nose, the palate attack proudly claims its young age. Long, silky, magnificently rustic, the palate finish is present even in an empty glass.

Elaboration:

Made with organic barley from six farms, this version is a blend of first-fill bourbon barrels (42%), new American oak barrels (17%), French oak barrels (23%) and barrels that have contained a natural sweet wine (18%).

Color:

Golden yellow with green highlights.

Nose:

Vanilla and herbaceous aromas mixed with milky notes, lemon accents, with aeration notes of ripe fruits, pear, mirabelle plum, spearmint, beeswax and a spicy touch.

Palate:

Ample, rich, with the same vanilla and herbaceous spirit as on the nose, the palate attack proudly claims the carefree nature of its youth. The long, silky, and magnificently rustic finish invites us, even with the glass empty, to appreciate and smell the notes of malted barley, very floral.

Temperature:

Serve at room temperature in a Glencairn whisky glass.

Food and wine pairing:

To be enjoyed dry, on ice or with a dash of fresh spring water.
