Vinification:

Hand harvested, vinification in barrels between 18 and 20°C. Aged on lees with regular stirring for 1 to 12 months.

Organic and Biodynamic wine, certified by Demeter.

Bright pale yellow.

Nose:

Ripe flavors of pear and pineapple underlined by fine bitters.

Palate:

Rich and round, this wine has an elegant balance, supported by a slight bitterness.

Temperature:

Serve between 10 and 12°C.

Aumônières of scallops, capon with yellow wine and morels, pan-fried foie gras.
