The 2021 white Chablis offers a fresh, precise and pure profile, with a very pleasant honeyed touch. The chalky backbone brings conciseness and minerality; the tension and concentration close a perfectly ripe and balanced palate, which will age beautifully and, above all, increase its complexity in one or two years. A wine for aperitif, seafood or cheese. Rated 91/100 by the Committee.Vinification:
Pneumatic pressing at low pressure, cold static settling during 24 to 48 hours. Fermentations activated with indigenous yeasts and carried out in thermo-regulated stainless steel tanks.Aging on fine lees for 15 to 18 months.
