Wine:

The 2022 white IGP Pays des Bouches-du-Rhône Les Grands Carmes was born on north-facing limestone scree slopes. With 80% clairette in the blend, this grand blanc, aged exclusively in foudres, is the perfect expression of Simone's style, with its airy, fresh profile and finely fruity notes. Open this summer or cellar for a few more years.

Vinification:

Hand-harvested, partially de-stemmed, aged on fine lees for 8 months in small oak tuns.

Pale, bright golden yellow.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Noble white-fleshed fish in a light cream sauce, sea bass in a salt crust, grilled salmon, fine Bresse poultry, aged Banon cheese or Spanish Manchego cheese.
