Wine:

The 2017 red Pauillac from Château Latour presents itself with great classicism and, above all, a royal balance! Composed mainly of Cabernet Sauvignon, it reveals beautiful notes of ripe plum, blackcurrant, and cherry, with the characteristic touch of graphite and smoke found in great Cabernets. Medium-bodied, it fully benefits from the finesse of the vintage, showcasing tension, supple tannins, and vibrant fruit. The exceptionally fresh finish seals the deal. A remarkable success to be enjoyed starting today.

Vinification:

Hand-harvested, parcels located in the south-western part of the Pauillac appellation on the "Saint Anne" terroir, with vines averaging 25 years of age, as well as Enclos complants still too young to be included in the Grand Vin du Château blend, de-stemmed and crushed, then fermented in temperature-controlled stainless steel vats for around 3 weeks, malolactic fermentation and ageing in French oak barrels, around 20% of which are new.

Domaine in conversion to Organic Agriculture by Ecocert label since 2015, viticulture according to biodynamic principles on the majority of the Enclos.

Color:

Dark, intense red.

Nose:

Aromas of ripe black plum, freshly crushed blackcurrant, cocoa cherry mixed with notes of pencil lead and a hint of clove, camphor and smoked meat.

Palate:

Medium-bodied, the palate trembles with this tension, with vibrant red and black fruits and supple, grainy tannins, finishing with fantastic freshness. This Pauillac delivers an ultra-classic, infallible score. A remarkable bottle!

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Spiced duck breast, herb-roasted lamb, Bordeaux-style porcini mushrooms, venison in sauce, beef and marrow bone, baked guinea fowl and seasonal black truffles.
