Wine:

The 2020 White Côtes du Jura Antide Savagnin is a green Savagnin grown on marl and schist, aged for four years on the lees with no added sulphur. Brilliantly fresh on the nose, it reveals a zesty, razor-sharp structure that’s equally intense and richly textured. Expect flavours of nuts, almond, and ripe yellow fruit with real depth. A wine of superb intensity and focus.

Vinification:

Hand harvested, vines grown on marl and cardboard schist soils. Aged for 4 years on lees in half-barrels without intervention or addition of SO2, indigenous yeasts.

Nose:

Ripe citrus fruits, spices, almonds, mineral.

Palate:

Straight, taut, long, with a salty finish, combining finesse and intensity.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

18-24 month Comté cheese, roasted sea bass, lemon butter sauce, herb emulsion, confit cod, parsnip and candied citrus mousseline, stuffed guinea fowl, dried fruit and herbs, asparagus risotto with shavings of aged Comté or Parmigiano Reggiano.

Cellar aging:

From now until 2035, and beyond for enthusiasts.
