Wine:

Ripe and harmonious, the 2021 red Châteauneuf-du-Pape offers us a very classic panel of the appellation as we so cherish them. Grenache dominates, with Syrah, Mourvèdre and Cinsault in ambush, and this quartet has everything you could wish for: a beautiful ripeness of the harvest, a full-bodied texture, perfumed with warm notes of black fruit, balsamic scents and bent by a reassuringly sober woodiness. A bottle like this is ready for a ten-year journey, unless you decant it first to enjoy it without delay! A sure thing to discover!

Vinification:

Hand-harvested. Vines about 50 years old. Maceration for 21 to 24 days with punching down and pumping over. Aged 70% in stainless steel vats and 30% in oak barrels and foudres for 15 to 18 months.

Color:

Ruby red with purplish highlights.

Nose:

Beautifully ripe grapes, lovely aromas of stewed black fruit, spicy notes and a touch of balsamic.

Palate:

The palate reveals a fine balance between these 4 grape varieties, a fresh register on an assertive terroir, a concentrated and powerful juice with finesse.

Temperature:

Serve between 14 and 16°C.

Roasted veal chop with cherry tomatoes pan-fried in olive oil and garlic, grilled duck breast with pan-fried eggplant, capon stuffed with porcini mushrooms, rack of veal Provençal style!

A historic address in Châteauneuf-du-Pape, Domaine Chante Cigale is making a strong comeback to the forefront! Alexandre Favier, the young steward of the estate, is bringing fresh energy that hasn't gone unnoticed by us. Indeed, having taken over recently, he has been infusing the place with a new vigor, bolstered by organic farming and a treasure trove of splendid old vines. Gentle aging, bright aromas of fruit, and slow infusion are the three cornerstones of his success.
