Wine:

Originating from vineyards neighboring those of Gonon, the 2021 red Saint-Joseph La Dardouille presents a subtle and bright interpretation of the Syrah grape. This wine is exceptionally pure, expressing delightful smoky and bacon-like notes. Its texture is juicy, elegant, and well-balanced, supported by a noble and understated use of oak. A truly magnificent bottle! Rated 94/100 by the Committee.

Vinification:

Hand-harvested. Vines aged between 30 and 80 years. Partially destemmed, then fermented in vats for 15 to 20 days. Aged in barrels or demi-muids of 1 to 2 wines for around 18 months.

Farming: Organic conversion and High Environmental Value.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Rack of lamb with fine herbs, stuffed quail, matured prime rib, braised duckling and melting potatoes.

Cellar aging:

From now until 2030 and beyond for enthusiasts.
