Wine:

The 2019 red Côtes du Roussillon Villages Latour de France Occultum Lapidem marks another success. Its intense aromas of macerated fruits and its restrained oakiness create a quintessential southern wine, with a masterfully orchestrated Mediterranean profile. This wine has a very ripe essence, framed by fine yet pronounced tannins, where the grenache is infused and the carignan brings all its freshness. This is a delightful bottle to serve with coq au vin or a Provençal stew, or to keep for further aging in the cellar.

Vinification:

Hand harvested and totally destemmed, maceration for 4 weeks, regular punching of the cap, 50% of the harvest is matured in concrete vats.

Organic wine, certified.

Color:

Intense red with some vermilion reflections.

Nose:

Ripe with a very Mediterranean solar profile with notes of macerated fruit

Palate:

The aromas are confirmed in the palate with a very ripe taste supported by fine but present tannins.

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Leg of venison, coq au vin, grilled lamb chops with herbs.
